Brownie cookies
Yield 20 Cookies
INGREDIENTS

2/3 cup flour

2 Tbsp unsweetened cocoa powder

2 tsp baking powder

1/4 tsp salt

8 ounces semisweet chocolate chips

1/4 cup unsalted butter

2 large eggs
-
1/2 cup white sugar
-
1/2 cup brown sugar
-
1 tsp vanilla extract

1/2 cup semisweet chocolate chips
INSTRUCTIONS

Preheat over to 350°F and line two baking sheets with parchment paper.

Whisk together flour, cocoa, baking powder and salt in a bowl

Place 8oz of chocolate and butter in a double boiler. Slowly melt, stirring occasionally until smooth. Remove from heat and set aside to cool slightly.

Whisk together eggs, sugars and vanilla on medium speed for 5 minutes. Reduce speed to low and mix in melted chocolate for 1 minute. Mix in flour mixture just until combined, fold in 1/2 cup chocolate chips with a spatula.

Use a cookie scoop or a tablespoon to form cookies, spacing cookies 3 inches apart. Bake for 12 - 14 minutes. Until tops are shiny and cracked.

Let cookies cool on baking sheet for 5 minutes before transferring to a cooling rack.
